One of the best smoked wing tricks that I know is split the cook time between the Big Green Egg, and an Air Fryer. The Big Green Egg slow cooks the wings without drying them out and the air fryer finishes the wings off with a crispy exterior. Tip- When you smoke the wings, only coat them with olive oil and seasonings. Seasonings can be salt, pepper and whatever else you'd like. Do not apply the buffalo sauce at this stage of the cook. It will shield the meat from the smoke and much of it will cook off. Once you have smoked your wings on 200 for about an hour, then move them to an air fryer for 15 minutes. Once the wings are crispy from the air fryer, THEN dunk your wings in your favorite wing sauce and enjoy!
